It turns out dates are a magical ingredient that I wish I discovered earlier in life, but, no time like the present.
I wanted to use dates as the foundation in this recipe for their non-overpowering flavor, yet naturally delicious sweetness.
Combined with vegan chocolate chips, some coconut oil, and a little trail mix, this treat only gets tastier AND healthier.
Chocolate Trail Mix Truffles
The right ingredients go a long way in these fudge-like truffles. If you're curious about vegan and gluten free treats, treat yourself to these.
- 8 dried dates, pitted
- 1/4 cup vegan chocolate chips
- 1 tsp coconut oil
- 1/4 cup trail mix
Melt the chocolate and the coconut oil together in either a microwave or a double boiler.
Combine the chocolate with the dates using your hands, a mixer, or a food processor. Then, mix in the trail mix until evenly combined.
Roll the truffle mixture out into 1/2-inch or 1-inch balls, and chill in the fridge for about 10 minutes.
