Cauliflower Chipotle “Cheese” Sauce (Vegan)

I’ve been wanting to play around with a recipe for a vegan cauliflower cheese sauce, after seeing so many of the delicious ideas out there.

I wasn’t planning on making this a spicy recipe, but to me, chipotle and cheese are great friends, and the flavors combined can be so addicting, if they are your kind of flavors.

 

I used chipotle flakes, so to bring out the flavor, I roasted them with the cauliflower and some oil first; I added smoked paprika as well, it is a lovely flavor with the chipotle.

Then, you just have to blend the roasted cauliflower with everything else.

Cauliflower Chipotle Cheese Sauce (Vegan)

Chipotle and cheese flavors come together in a silky cauliflower sauce; easy to make, delicious to eat.

Ingredients

Roasted Cauliflower

  • 2 cups cauliflower florets
  • 2 tbsp olive oil
  • 1 tsp minced garlic
  • 1 tsp chipotle pepper flakes
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper

Other Ingredients

  • 1/2 cup nutritional yeast
  • 1 tbsp garlic powder
  • 1.5 cups almond milk
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat your oven to 400, and mix everything together for the roasted cauliflower in a pan. Roast for about 20 minutes. 

  2. Allow the roasted cauliflower to cool for about 15 minutes, and in the meantime, measure out the rest of the other ingredients for the sauce, and put them in a blender or food processor. 

  3. When the cauliflower has cooled to about room temperature, add it to the other ingredients, and blend until smooth. 

  4. Reheat in a skillet with just a bit of oil, and use it as a sauce, dip, or spread (try it cold, it's not terrible). 

There’s deffinitely a difference in taste when the sauce is cool or warm, and my personal preference is to eat it warm because the flavors stand out more.

The first thing I did with the sauce is smother it over some spinach noodles that were sautéed with black beans and greens.
