If you’re wondering why this Cucumber Watermelon Juice doesn’t seem to have any kind of pink to it, that’s because I unknowingly picked up a yellow watermelon at the co-op, and it was a super sweet surprise.
The taste of the yellow watermelon was definitely a lot sweeter than a regular one, so I wouldn’t add anything if you’re not a fan of super sweet; I added a little agave, and the sweetness level was close to sweet tea (in my opinion).
Cucumber Watermelon Juice
Refreshing and balanced juice with all the yummy cucumber watermelon flavor.
- 1 cucumber rough chop
- 1 mini yellow watermelon scooped out of the rind (if it's super big I'd go with half)
- 1 lemon juiced
- 1/4 tsp pink salt
- 1 tsp sweetener of your choice I used agave
- 2 probiotic capsules optional
Blend everything together on high for about 60 seconds, or until there aren't any chunks of fruit or cucumber.
Strain the juice through a nut milk bag (cheesecloth is another route you can go), until all that remains is the pulp.
Pour the juice into a couple mason jars, store in the fridge, and enjoy within 2-3 days.
It's totally optional to add probiotics to the juice, I do it because I like sneaking this gut-friendly powder into drinks and meals over taking the pill.
