Green dreams are made of… shutting up now.
Green, Green, GREEN. Are you dreamy for this great color blooming around you this Spring? If so, maybe you’d be in the mood for these Green Dream Spring Rolls.
I used to eat very small amounts of green things when I was younger, so I can’t tell you how refreshing it feels to indulge in meals that are loaded with such great energy.
Remember learning in school about the food chain and stuff like that? I envision the food chain chart all of the time in my mind lately, and what I add is a vision of the sun… remember what’s closest to the sun in that chart? Yep, PLANTS.

One of the simple reminders I give myself throughout my transition to healthier eating is that when I choose to indulge in plants, I get to eat foods that are closer to the sun; it’s no wonder why eating plants makes us feel so light.

Spring Roll Time
Please feel free to use whatever green ingredients you like, and I totally won’t judge if you add some purple cabbage or carrot or anything.
One of the greatest hopes I have in sharing these recipes is to bring inspiration to you, and as you might have heard in a yoga class before, “move to your flow”; a.k.a. feel free to dip into your creative side, and change it up a bit.
Here’s what I did…
Green Dream Spring Roll
Everything green, to bring you energy.
Green Dream Spring Rolls
- 1 cup water
- 6 rice paper
- 2 cup baby spinach
- 1 cup chopped broccoli florets
- 1 avocado
- 1 granny smith apple
Sweet n' Spicy Sesame Dipping Sauce
- 1/4 cup sesame oil
- 1 tbsp rice wine vinegar
- 1/2 tbsp soy sauce
- 1 tsp maple syrup
- 1/4 tsp pepper flakes
- 1/2 tsp sesame seeds
Gather and prep all ingredients for the Spring Rolls, then grab two plates, and put 1 cup of water in one of them.
Grab a cutting board, dip a rice paper into the water for about 2 seconds, and place it on the cutting board.
IMMEDIATELY put down three slices of avocado in the center, then a small handful of spinach and kale and broccoli on top of that, and then place three apple slices in front of everything.
Roll the spring rolls like a burrito, and repeat until all 6 are finished (if you have leftover stuff, make more!)
For the sauce, place all ingredients in a small bowl, and whisk until emulsified.
