Keeping it seasonal, and checking out some food facts of squash…starting with butternut
(I also have a yummy, toasty treat to tell you about after).

Today for toast Tuesday, I roasted up some butternut squash with herbs and oil, and then added it to an O’Doughs everything bagel. I also added avocado and sliced apple… nom, nom, nom.
I really enjoy learning about the health powers of a certain food, and then eating it; knowing I’m getting all the good stuff I was just reading about.
I’ll be posting a recipe for the roasted butternut squash soon 🙂
