Frozen Minty Green Cashew Bars

Enjoy a sweet treat at your next Holiday gathering with this Frozen Minty Green Cashew Bars recipe.

After discovering some of the amazing vegan treats you can make with cashews, I’ve been experimenting with various ideas, and the minty green cashew cream in this recipe turned out pretty awesome

I added some spinach for color

While this recipe is easy to make, it does take a while, since the cashews have to soak, and the bars should freeze for at least two hours before getting cut.


Frozen Holiday Cashew Bars

These cashew bars are sweet and guilt free. Indulge and feel good.

raw cocoa date crust

  • 3/4 cup oats (I used quick oats)
  • 6 dates pitted
  • 1 tbsp cocoa powder
  • 1 tbsp coconut oil

minty green cashew cream

  • 1 cup cashews
  • 1 cup water
  • 1/4 cup mint
  • 1/4 cup spinach
  • 1 tbsp maca powder
  • 1 tsp agave syrup
  • 1/2 cup pomegranate seeds (to place on top)

chocolate coating

  • 1/2 cup vegan chocolate chips
  • 1 tbsp coconut oil


  1. Soak the cashews in the water for at least two hours (even overnight wouldn't hurt). 

  2. Line a loaf pan with parchment paper. Mix together all ingredients for the raw crust, then press into the lined pan. 

  3. Blend the soaked cashews (including the water) with the other ingredients for the cashew cream, pour on to the crust, then top with the pomegranate seeds. You could also just mix the pomegranate in if you would rather.  

  4. Melt the chocolate and coconut oil together until smooth, and pour over the cashew cream. Freeze for at least two hours or overnight. 

  5. When you go to cut the bars, it helps to clean your knife as it gets dirty, so you get a clean cut. 

  6. Enjoy!

I’m planning on making more to take home for christmas -> I’m almost done eating all of this batch, hehe.
