Last week I experimented with a new vegan treat, and I think I’m in love with this one-> Fruity Peanut Butter Cups-> chocolate peanut butter cups with fruit in the middle.
In this case, I really needed to use up some blackberries, so that’s what I went with.
Fruity Peanut Butter Cups
It takes only 3 ingredients to make a yummy fruity peanut butter cup-> peanut butter, fruit, and chocolate. So simple, and crazy good.
- 8 tbsp peanut butter
- 1/2 cup vegan chocolate chips melted
- 16 fresh blackberries
Line a mini muffin pan with 16 baking cups, and put 1/2 tbsp peanut butter in each one.
Gently press the blackberry into the peanut butter, then cover all of the cups with the melted chocolate.
Freeze for at least 3 hours, or overnight (I also recommend storing these in the freezer, so that the peanut butter keeps its shape).
