Back to the Burgers

I mashed some canned black beans with a whisk so that I could achieve a balance of mashed and whole beans, to try and keep some texture in the burger.

I’ve seen spinach coming up over and over as a really good source of iron, so I couldn’t resist to cook some down with some aromatics, and add it to the mixture (the more I learn about various fruits and veggies and their health benefits, the more I try to use them in a way that makes sense).

Add some high-quality garam masala, and enjoy some sweet and smoky goodness.

Garam Masala Black Bean Burgers

A yummy spice rounded with flavor brought to a nutritious vegan burger; health and tastiness is totally conquered here.

Ingredients

  • 1 can black beans rinsed
  • 1/2 tbsp oil (I used olive)
  • 1 tsp minced garlic
  • 2 tbsp red onion
  • 2 cups baby spinach
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garam masala

Instructions

  1. Mash the beans with a whisk or in a mixer (for texture, leave some of the beans whole).  

  2. Heat the oil in a medium size skillet, then add the garlic and onion and cook for about two minutes. Then, add the spinach, and stir until it all cooks down (adding a splash of water helps). 

  3. Add the cooked spinach mixture to the beans, and form the mixture into patties. 

  4. Heat a little oil in a skillet, add the burger, then cover and cook for about three minutes each side on medium high heat. 

  5. Enjoy!

For my meal, I toasted a piece of garlic naan from Trader Joes, topped that with some mixed greens, placed the burger on top, added some sliced mango (Kevin gets the credit for those perfect little slices) then sprinkled some more garam masala on top. Yumminess central <3
