Breakfast Crepes Holiday Ice Cream Recipe Saint Patricks Day Vegan

Golden Crepes with Super Green Banana Avocado Ice Cream

Gold and green colors to celebrate Saint Patrick’s Day, AND EVERYTHING IS VEGAN.

For the green, I made a Super Green Banana Avocado Ice Cream using Organifi Green Juice Mix.

For the gold, I made vegan gold crepe batter with turmeric.

First Let’s Make The Golden Crepes

don’t the bananas look like little gold coins?

The crepe batter recipe I used is from Everyday Vegetarian (the same recipe I used for my Valentines Day Crepes).

You’ll notice that the recipe in the crepe batter link calls for regular flour, but since I only had whole wheat flour at hand, I used that; unfortunately, I think that’s what made my batter come out thicker than it should have, but it still worked out fine.

I made the batter as instructed, only this time, I added half a tablespoon of turmeric powder to give a golden color; it worked out so good.

(p.s. if you’re interested in some high quality turmeric, head to Seasonality Spices and use my promo code HEALTHINDULGENCE for 15% off your purchase).

Time to Spin Out the Crepe

A crucial tip when spinning out crepes is to not over-grease the griddle. What I like to do is coat the surface with a light amount of coconut oil, and then gently spread it around using a paper towel, or clean dish towel.

Spinning out crepes is one of the most challenging parts about making crepes, so here’s a video if you want to learn how it’s done. Working at a creperie, I get my fair share of practice.

I also have to give props to my home-crafted spinner; made using two chopsticks and some masking tape.

Pour 1/2 cup of batter in the middle of the griddle or skillet

Spin out the crepe, and then add 3 lines of turmeric powder across the surface.

How To Make a Two-Fold Crepe

Flip the crepe, and add some of your favorite fillings; jam, agave, peanut butter, etc.

I added a drizzle of maple syrup to one half, and topped that with some coconut flakes.

Then, fold the crepe in half,

and fold it in half again.

Now Let’s Make the Banana Avocado Ice Cream

When I purchased one of Organifi’s shaker bottles, I got some free green juice go packs, so I just used one of those in the ice cream recipe.

One 9-gram pack of Green Juice has 11 superfoods; that’s why this is a SUPER ice cream.

Super Green Banana Avocado Ice Cream

Made with only 4 ingredients, but loaded with superfoods.

  • 1 Organifi Green Juice Go Pack 9 grams
  • 1 frozen banana
  • 1/2 avocado
  • 2 tbsp almond milk

  1. Blend all ingredients together in a blender or food processor. Use immediately, or store in the freezer.

I topped the golden crepe with some banana slices and a scoop of the ice cream, then I made a messy presentation with some maple syrup, buckwheat kernels, chopped cashews, coconut flakes, and turmeric powder; kind of looking like the leprechauns visited this plate.
