Almond Joy Energy Bites

These Almond Joy Energy Bites were made from almond pulp after I made almond milk using my Ellie’s Best Bigger Better Nut Milk Bag; a perfect kitchen companion for anyone trying to make more beverages and foods from scratch.

After getting my nut milk bag a few months ago, I realized that I’m going to really have to dig dip into my creativity, to find ways to use the pulp that remains from making fresh juices or nut milks; it’s a yummy adventure.

I wish I had chocolate to dip these babies in, so that it really seems like an almond joy candy, but, hemp seeds weren’t a bad replacement.

The almond pulp combined with shredded coconut and a few other ingredients created a decent texture with all the right flavors :p

Hemp Almond Joy Energy Bites

Finding things to do with leftover almond pulp can be challenging, but these Hemp Almond Joy Energy Bites make a tasty treat, that are super good alongside a glass of homemade almond milk.

Ingredients

  • almond pulp (from 1 quart almond milk)
  • 5 dates
  • 1/4 cup shredded coconut
  • 1/4 cup cocoa powder
  • 1/2 tsp coconut extract
  • 1/2 tsp almond extract
  • 1/4 tsp pink salt
  • hemp seed to roll in

Instructions

  1. Combine all ingredients EXCEPT for the hemp seeds, and roll the mixture into balls.

  2. Roll the almond joy balls in hemp seed, and store in the fridge for up to 3 days.
