Herb Roasted Butternut Squash
Comfort and health come together with this simple herb roasted butternut squash recipe, made with rosemary and sage.
- 1 butternut squash quartered
- 2 tbsp olive oil
- 1 tbsp chopped rosemary
- 1 tbsp chopped sage
- 1 tsp salt
- 1 tsp pepper
Preheat the oven to 400 F. Quarter the butternut squash and place on a sheet pan, then add all ingredients and evenly coat the squash.
Roast in the oven for 20 minutes, or until fork tender.
Enjoy by eating the squash right off the skin, or scoop it all into a bowl.
