Herb Roasted Butternut Squash and Simple Harvest Meals

If you’re a foodie diving into the Fall season, and you’re looking for a simple side to have with dinner, or even looking to have something ready to go for the week ahead to have with meals, you should totally try this Herb Roasted Butternut Squash recipe.

Made with minimal ingredients, to bring simple deliciousness to your table.

I can’t believe how fast summer flew by, but Fall is definitely a season I also look forward to; not being too hot to sleep is one of my favorite things about it, as well as apple cider donuts and seasonal spices and cozy meals and things like that. 

I don’t usually cook a lot of squash, but after getting creative and coming up with tasty ways to use it up (like on pizza) it gets easy to go from “I’m not feeling this” to “I’m craving this”.

Herb Roasted Butternut Squash

Comfort and health come together with this simple herb roasted butternut squash recipe, made with rosemary and sage.

Ingredients

  • 1 butternut squash quartered
  • 2 tbsp olive oil
  • 1 tbsp chopped rosemary
  • 1 tbsp chopped sage
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat the oven to 400 F. Quarter the butternut squash and place on a sheet pan, then add all ingredients and evenly coat the squash. 

  2. Roast in the oven for 20 minutes, or until fork tender.

  3. Enjoy by eating the squash right off the skin, or scoop it all into a bowl.
