As soon as it gets cold, my body wants some comfort food… like this vegan pasta bowl that’s nice and hot, and full of nutrients, flavor and spice.
Hot Vegan Pasta Bowl
Some spice, some leafy greens, some protein and some pasta; sounds like a cozy meal to me.
- 2 tbsp olive oil
- 4 oz firm tofu pat dry, and diced
- 1 tsp paprika
- 2 tsp garlic powder
- 1 tbsp nutritional yeast
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup spinach
- 1 cup cooked farfalle pasta
Heat the olive oil in a medium size skillet, then add the tofu and cook on high for 3-4 minutes. Toss occasionally to brown all sides.
Lower the heat to medium, add all the seasonings, toss, and then add the spinach and the cooked pasta.
Toss everything together and cook for a couple more minutes, pour into a bowl, get cozy and dig in.
