Mediterranean Avocado Toast

Yesterday was #toasttuesday in the Instagram world, and I couldn’t resist sharing an old favorite-> Mediterranean Avocado Toast.

One day Kevin and I plan on going to Cyprus to visit a couple of friends who are from there, and I’m hoping we can pick olives and I can re-create this toasty treat for them to try.

Mediterranean Avocado Toast

Mediterranean flavor meets avocado toast.

Ingredients

  • 2 slices sourdough bread toasted
  • 1 avocado
  • 2 tbsp Greek Yogurt
  • 8 cucumber slices
  • 2 grape tomatos sliced in half
  • handful olives
  • 1 tsp lemon juice
  • 2 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp dried oregano
  • 1/4 tsp smoked paprika

Instructions

  1. Put half of the avocado on each slice of bread, then begin decorating with the rest of the ingredients. Truthfully, I just eyeballed everything, so don't take the the measurements too seriously; adjust according to your desires.
