Mint Chip Smoothie Bowl

A vegan take on one of my favorite desserts, mint chip ice cream.

Mint Chip Smoothie Bowl

All the flavors of mint chip ice cream, with way more nutrients.

Ingredients

  • 1 frozen banana
  • 1/4 cup spinach
  • 1 tbsp maca powder
  • 3-6 mint leaves
  • 1 tbsp maple syrup
  • 1/4 cup almond milk

Instructions

  1. Blend all ingredients together until smooth, pour into a bowl, and decorate with whatever you like

I topped my smoothie bowl with dark chocolate granola, hemp seed, mint leaves and chocolate chips.
