Panko Crusted Tomatillos

When it comes to crunchy things, my heart has a big place for this yummy texture, hence why I love these Baked Panko Green Tomatoes.

If you’ve ever had fried green tomatoes, you know that they’re delicious and crunchy and everything yummy, and luckily, this recipe is as well, BUT, there is no oil used.

p.s. I totally won’t judge you if you do decide to fry them, but they are just as yummy baked.

Panko Crusted Tomatillos

Crispy and yummy like fried green tomatoes, just baked and made with no oil.

  • 2 tomatillos rinsed and sliced into thick circles
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup flour
  • 2 eggs scrambled
  • 1 cup seasoned Panko crumbs


  1. Preheat oven to 375. Slice the tomatillos, then season with salt and pepper. 

  2. Measure out the flour and the breadcrumbs on two separate plates, and scramble the eggs in a bowl. 

  3. One at a time, dredge the tomatillos in the flour, then dip them in the egg, coat them in the Panko crumbs, then place on a baking pan. 

  4. Bake in the oven for about 8-10 minutes, turn the circles over, then bake for another 10 minutes.
