Vegan Chocolate Peanut Butter Cookies

Nothing says Happy New Year more than Vegan Chocolate Peanut Butter Cookies, especially if trying vegan is one of your resolutions for 2019.

Even better is these cookies don’t have any added sugar, and that never hurts. As soon as I consume sugar, the addiction kicks in and I go way over the limit (you can only say ”one more” so many times…).

Another cool thing is that the oats in these cookies will help you stay fuller longer, all thanks to soluble fiber.

Vegan Chocolate Peanut Butter Cookies

A wonderful combo of flavors and nutrients, these cookies are sure to satisfy.

Ingredients

  • 1 banana mashed
  • 1 tbsp coconut oil
  • 1 tbsp peanut butter
  • 1 tbsp cocoa powder
  • 1/2 cup quick oats
  • 1/4 cup flour
  • 1/8 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 375. Mash or whisk the banana until smooth. Then, add the coconut oil, peanut butter and cocoa powder, and mix everything together. 

  2. Add the rest of the ingredients, and mix everything together. Grease or line a baking pan, plop the cookie mixture on it, and bake in the oven for about 8-10 minutes. 

  3. Allow to cool before enjoying. 

If you’re feeling adventurous, feel free to add some nuts or chocolate or dried fruit, for even more flavor and nutrients.

I’ve been enjoying these yummies with hot tea, it’s a really cozy experience.
