Let’s Talk About The Maharajah Masala Blend
This Indian curry powder by Seasonality Spices is a wonderful blend of saffron, cardamom, cinnamon, clove, turmeric, and pepper.
It is known as the “great king” of spices, and it is known for its versatility and extra rich flavor.
I really enjoy using this robust blend in the kitchen (sometimes I just smell it for aromatherapy). I always look forward to developing recipes with it, and I’m excited to learn more about it as I continue working with it.
I like to let what’s on hand tell me what I’m going to make, so with lots of cooked rice and some coconut oil and fresh veggies and onion and garlic on hand, I decided that would probably go nice with the maharajah curry powder.

Veggie Maharajah Stir Fry
Simple ingredients, seasoned with a tradition Indian curry powder called maharajah.
Ingredients
- 1 tbsp coconut oil
- 2 tsp minced garlic
- 1/4 red onion sliced thin
- 1 bell pepper sliced into strips
- 3-4 cabbage leaves sliced thin
- 1/2 cup shelled edamame
- 1 carrot sliced thin
- 1 tsp apple cider vinegar
- 1 tbsp water
- 2 tsp maharajah curry powder
- 1 tsp salt
- 1 tsp pepper
Instructions

Prep all ingredients, and heat the oil in a pan.

Add the garlic and the onion, and cook for about 3 minutes over med/high heat.

Add the rest of the veggies, stir, then add the apple cider vinegar. Cook over med/high heat for about 11 minutes, stirring occasionally.

Add the water, stir, then add the salt, pepper and maharajah curry powder.

Enjoy over steamed rice, or enjoy this simple stir fry on its own.
Definitely feel free to expand your horizons with this recipe by adding other veggies and or proteins and or seasonings.
