Glowing Bean Panini

I'll call anything with turmeric in it glowing.

  • 2 slices sourdough bread
  • 1 avocado mashed
  • 1/2 cup chopped kale
  • 3 tbsp olive oil

Glowing Pinto Beans

  • 1/2 cup pinto beans
  • 1 tsp ground turmeric
  • 1/4 tsp chipotle pepper flakes
  • 1 tbsp maple syrup
  • 1/2 tbsp apple cider vinegar


  1. Mash the avocado, and combine all ingredients for the glowing pinto bean mixture. 

  2. Brush the sourdough with some olive oil, flip over, and start building the panini. 

  3. Brush a skillet or griddle with olive oil, and heat over medium/high. Place the panini down, and press a large pan or tray down on the panini. Cook for four minutes each side.
