Veggie Maharajah Stir Fry

Simple ingredients, seasoned with a tradition Indian curry powder called maharajah.

Ingredients

  • 1 tbsp coconut oil
  • 2 tsp minced garlic
  • 1/4 red onion sliced thin
  • 1 bell pepper sliced into strips
  • 3-4 cabbage leaves sliced thin
  • 1/2 cup shelled edamame
  • 1 carrot sliced thin
  • 1 tsp apple cider vinegar
  • 1 tbsp water
  • 2 tsp maharajah curry powder
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Prep all ingredients, and heat the oil in a pan. 

  2. Add the garlic and the onion, and cook for about 3 minutes over med/high heat.

  3. Add the rest of the veggies, stir, then add the apple cider vinegar. Cook over med/high heat for about 11 minutes, stirring occasionally. 

  4. Add the water, stir, then add the salt, pepper and maharajah curry powder. 

  5. Enjoy over steamed rice, or enjoy this simple stir fry on its own.
